Pumpkin – 2 cups grated
White sugar/Country sugar – ½ cup
Cardamom powder – ½ tsp
Cashews or almonds – few chopped
Preparation Time: 15 min

Add ghee to a hot pan and fry the nuts until golden. Keep them aside.
To the same pan, add grated pumpkin. Fry for about 4 to 5 mins till the raw smell goes off.
Pour milk to the pan and cook until the milk is absorbed.
Then add country sugar and cook at low flame till the sugar melts and the halwa thickens.
The halwa should be thick and separates from the pan is the right consistency of halwa.
Finally add fried cashews/almonds. Serve pumpkin halwa hot or warm.
