What is Mushroom Ghee Roast?

How to make Mushroom Ghee Roast?

1 cup mushroom
1 cup chopped onions
1 tablespoon coriander seeds
6-7 dry red chillies
1 teaspoon cumin seeds
½ teaspoon mustard seeds
½ teaspoon black pepper
½ teaspoon fennel seeds
5 large garlic cloves
1 tablespoon tamarind pulp
3 tablespoon curd
Salt to taste
A Small piece of Jaggery
Preparation Time: 15 min
Cooking Time: 20 min
For the ghee roast paste:Dry roast all the spices and allow them to cool.
Now blend the spices along with garlic cloves, curd, tamarind, and enough water to form a smooth paste.
Transfer the ghee roast masala into a bowl and set aside.
Mushrooms: Heat 2 tbsp ghee in a pan and then sauté mushrooms in it until they are golden brown.
Then transfer to a plate and set aside.
In the same pan, add 4 tbsp ghee then Saute chopped onions until golden
Add the smooth ghee roast paste and cook on medium-low for 15 minutes, stirring in between until the ghee starts to separate.
Now add in the mushroom, little jaggery and mix well.
Add salt and Cook on low heat for 5 minutes, allowing it to reduce.
Remove from heat, garnish with freshly chopped coriander, and serve with chapati or rice.
Cooking tips: 1) Ghee is the key flavor enhancer - add as per your preference. 2) It's best to use button mushrooms for this recipe.
