Take the Appam mix in a large bowl and gradually add the coconut milk with continuous stirring to avoid lumps.
Adjust the Consistency of batter with water. Batter should be thin (slightly thinner than a dosa batter).
Do not make the batter too thin or too thick.
Preheat the Appa kadai or the Appam pan on medium high heat.
Pour a ladle of batter on the Appa kadai and swirl the pan in circular motion to spread the batter into the sides of the pan.
The batter will be thick in the center and thin on the sides.
Break a whole egg in the centre of the Appam.
Sprinkle some salt and pepper.
Cover the pan with a lid for approximately 2 minutes, or until the Muttai Appam is crisped and golden brown on the sides and the centre is cooked well.
Then gently scrap the edges of the appam with sharp spatula to remove from the pan.
Serve Muttai Appam along with Chicken Curry or Egg Curry.
